Pasta, Bean And Chilli Bake Recipe

Ingredients

  • 1 sm Onion, minced
  • 1/2 x Red pepper, minced
  • 1 x Clove garlic, crushed
  • 3 1/2 ounce Lean chopped beef
  • 1 x 220 gram can minced tomatoes
  • 2 Tbsp. Tomato puree
  • 1/2 tsp Chilli pwdr
  • 1 pch Paprika
  • 1 x 215 gram can kidney beans, liquid removed and rinsed
  • 1 Tbsp. Fresh parsley, minced
  • 2 3/4 ounce Dry pasta shapes, cooked, liquid removed and refreshed
  • 1 ounce Granary breadcrumbs
  • 1/2 ounce Grated parmesan cheese

Directions

  1. Place the onion, pepper, garlic and mince in a non-stick frying pan and fry for 3-4 min till the mince is brown and the onions are beginning to soften. Add in the tomatoes, tomato puree, chilli pwdr and paprika to the pan, bring to the boil, cover and simmer for 10-15 min. Stir in the kidney beans, parsley and pasta, heat through then transfer to an ovenproof dish. Mix together the breadcrumbs and parmesan. Sprinkle over the pasta.
  2. Place the dish under a preheated grill for 1-2 min till golden brown.
  3. Serve with vegetables or possibly salad and extra bread.
