  • 5 x Large eggs, separated
  • 1 c. Sugar
  • 3/4 c. Sifted matza cake meal
  • 1/4 c. Potato starch
  • 1/4 c. Vegetable oil
  • 1/2 c. Mashed riped bananas
  • 1 tsp Grated lemon rind

Directions

  1. Prehet oven to 325F. Beat egg whites to solft peaks. Gradually add in 1/2 c. sugar and continue beating till egg whites are very stiff. Sift dry ingredients into mixing bowl. Make a well in the dry ingredients and add in egg yolks, vegetable oil, mashed bananas, and lemon rind. Beat till smooth. Mix in stiff egg whites.
  2. Bake in an ungreased 10 inch tube pan for 50 to 60 min or possibly till a cake tester comes out clean and dry. Remove from oven, invert pan and cold. When cake is cold, remove from pan and dribble glaze over top.
