Ingredients

  1. Marinate the pork with the garlic, Rosemary and cloves for 2-4 hrs.
  2. Remove the pork from the marinade and season with salt and pepper. Heat a heavy base pan with 11/2tsp of oil and seal on all sides till golden.
  3. Add in 1tbsp of sugar and 1tbsp honey and roll the pork around. Place into a preheated oven to finish cooking or possibly continue to fry on the stove for 4-5 min.
  4. Leave to rest for 8 min before carving. Serve with creme fraiche and mixed herbs.
  5. Plum sauce: Heat the butter in the pan and gently fry off the onions with the sugar and spices till soft.
  6. Add in the minced plums and cook for 6-8 min.
  7. Add in the stock and simmer for 15-20 min.
  8. Add in the mint. Pass through a food processor or possibly serve rustic.
  9. Couscous: Heat the butter and add in the minced shallot.
  10. Add in the spices and sugar and stir well. Add in the couscous and sultanas, stir well.
  11. Add in the chicken stock and bring to the boil stirring continuously.
  12. Add in the fresh coriander and cook for 2-3 min and remove from the heat.
  13. Cover and keep hot.
