1/2 c. melted butter or possibly margarine
1 c. lowfat sour cream or possibly lowfat yoghurt
1/2 c. brown sugar
1 x egg
1 tsp vanilla
11/20 c. flour
1 tsp baking pwdr
1/2 c. walnuts
3/4 c. minced marshmallows

Directions

Preheat oven to 400F & prepare muffin pans. Put the first six ingredients into a bowl & mix well. Add in the remaining ing. except marshmallows, blend till just mixed, then mix in the marshmallows. Put into pans & bake for 15-20 mins.
Makes 15 muffins.
