Legend has it that black eyed pea's black spots look like coins. So the tradition of eating them on New Year day for luck and money through the next year began. You'll love serving this simple and fresh recipe to friends and family.

  • 1 15 oz Can Black Eyed Peas, rinsed and drained
  • 1/2 c Cold Rice
  • 1 sm Cucumber, seeded & chopped
  • 1 lrg Tomato, chopped
  • 1/2 c Purple Onion, chopped
  • 1/2 c Green Pepper, chopped
  • 1/2 c Balsamic Vinaigrette Dressing, bottled is fine
  • Feta Cheese - optional

Directions

  1. Mix all ingredients except Feta Cheese and Tomato. Cover and refrigerate for at least 1 hour. Add tomato 15 minutes before serving and return to the refrigerator. May top with Feta Cheese when serving.
