My Favorite Holiday Cake Recipe

Ingredients

  • 1 x pineapple supreme cake mix
  • 4 x Large eggs
  • 1 bot 7-up (10 ounce.)
  • 1 box pineapple cream pudding (instant)
  • 3/4 c. crisco oil Icing:
  • 1 1/2 c. sugar
  • 1 stk butter or possibly margarine
  • 1 lrg can crushed pineapple undrained
  • 2 c. coconut (to 3 c.)
  • 2 x Large eggs
  • 2 tsp plain flour

Directions

  1. Mix all ingredients for cake EXCEPT 7 UP. Beat 1 1/2 min. Add in 7-UP, beat additional 30 to 45 seconds. Using 18x19x2" oblong baking pan, bake at 350 for 35 to 40 min. Don't remove from pan.
  2. ICING: Mix all ingredients except coconut. Cook till thickened, stirring constantly. Stir in coconut. Let cold. Leave cake in pan, let cold, then spread icing on top. Cut and serve directly from pan. This is a very moist cake.
