Ingredients

  • 4 c. Sugar
  • 1 c. Water
  • 1 Tbsp. Lemon extract
  • 6 lb (around 24) ripe peaches, peeled and sliced

Directions

  1. 1. In a large saucepan, dissolve sugar in water over medium- high heat and bring to a boil; cook for about 5 min, or possibly till syrup is clear. Skim off any froth.
  2. 2. Add in vanilla and lemon extract, stir in peaches, and return to a boil.
  3. Watch carefully to prevent from boiling over.
  4. 3. Boil for 5 min. Remove from heat and skim off any froth.
  5. 4. Fill warm, sterilized jars (qt-size screw-top Mason jars) and adjust caps; a suction seal will form with cooling. Store in a cold, dark place.
  6. Serve with warm biscuits, or possibly hot over vanilla or possibly Texas peach ice cream.
  7. Makes 3 qts.
