Ingredients
- 4 x Waitrose Part Boned Chicken Breasts
- 500 gm Waitrose Ready-To-Eat French Prunes
- 125 ml Waitrose Extra virgin olive oil, (4fl ounce)
- 30 ml Waitrose Pure Clear Honey, (2tbsp)
- 1 x Red onion, peeled and sliced
- 3 x Cloves garlic, roughly minced
- 5 ml Grnd cumin, (1tsp)
- 15 ml Capers, (1tbsp)
- 5 ml Fresh ginger, freshly grated (1tsp)
- 100 gm Black olives, pitted (3 1/2 ounce)
- 225 ml Dry white wine, (8fl ounce)
- 30 ml Fresh coriander, minced (2tbsp)
Directions
- Remove the skin from the chicken and place the chicken in an ovenproof casserole. Add in the prunes.
- Place the extra virgin olive oil in a jug. Add in the honey, onion, garlic, cumin, capers and ginger to the oil and mix together.
- Pour the mix over the chicken and prunes. Mix well. Add in the remaining ingredients and mix thoroughly.
- Leave to marinate for 30 min. Place the chicken in a preheated oven 180 C, 350 F, gas mark 4 for 45 min or possibly till thoroughly cooked.
- NOTES : Soft, succulent French prunes, marinated with garlic, olives, capers and fresh herbs create a quick, easy supper dish with all the flavours of the Mediterranean, served with either rice or possibly couscous.
