Directions

  1. Marinate beef in lemon juice, soy sauce and pepper to taste for 10 minutes. Drain and save marinade.
  2. Spread beef flank and arrange on it, in lengthwise rows, Vienna sausage, sweet pickles, bacon, cheese, olives, hard-boiled eggs and carrot. Roll with meat grain lengthwise and tie with a string.
  3. Simmer in oil in a mixture of marinade, garlic, onion, tomato sauce and water for 1 hour or until meat is tender.
  4. Season with salt and pepper to taste.
  5. Transfer meat roll to a platter, remove string and slice crosswise into 1/2-inch thickness.
  6. Pour sauce over meat and garnish with parsley.
