Ingredients
- 4 lg. boiling potatoes
- Water
- Salt
- 1 med. onion
- 1 clove garlic, chopped
- 1/2 c. finely minced parsley
- 3 tbsp. vegetable oil
- 1 1/4-1 1/2 c. chicken broth or possibly water
- Salt & pepper to taste
Directions
- Peel and slice potatoes 1/4 inch thick; put in water. Saute/fry onion, garlic and parsley for 5-10 min till soft but not brown. Drain potatoes and add in to skillet. Saute/fry 5 min. Add in broth and bring to boil. Lower heat and cover. Simmer till potatoes are cooked, 20 min.
