%20since%20it%E2%80%99s%20been%20raining%20so%20much%20and%20being%20this%20preggo%20has%20its%20limitations.%3C/p%3E%3Cp%3EThat%20being%20said,%20recent%20Facebook%20and%20Instagram%20shots%20of%20friends%20sitting%20poolside%20has%20me%20hopeful%20that%20something%20will%20come%20along%20soon%E2%80%A6right?%20RIGHT?!%3C/p%3E%3Cp%3EAlthough%20I%E2%80%99ve%20slowed%20way%20down%20in%20the%20fitness%20department,%20I%E2%80%99m%20still%20trying%20to%20get%20outdoors%20everyday%20for%20a%20walk%20(even%20if%20it%E2%80%99s%20just%20my%20morning%20mom%20walk%20which%20will%20end%20in%20approximately%203%20days%20-%20sniff!)%20or%20at%20least%20sit%20out%20on%20the%20back%20deck%20in%20the%20afternoon,%20working%20in%20the%20sunshine.%3C/p%3E%3Cp%3EI%E2%80%99ve%20also%20been%20getting%20outdoors%20on%20farm%20fields%20all%20across%20the%20state%20as%20the%20Join%20My%20Journey%20campaign%20rolls%20on%20throughout%20the%20summer.%20Why%20yes,%20that%20would%20be%20me%20sitting%20in%20a%20tractor%20cab%20planting%20soybeans!%3C/p%3E%3Cp%3EJust%20last%20week%20I%20spent%20a%20morning%20on%20a%20turkey%20farm%20in%20northwest%20Iowa,%20which%20I%E2%80%99ll%20be%20posting%20about%20on%20the%20Join%20My%20Journey%20site%20later%20this%20month,%20then%20later%20that%20afternoon%20I%20was%20invited%20to%20the%20farmer%E2%80%99s%20home%20to%20have%20a%20turkey%20feast%20with%20his%20beautiful%20wife%20and%20three%20children.%20Among%20the%20dishes%20we%20devoured%20was%20Easy%20Salsa%20Turkey%20Meatloaf,%20and%20it.%20Was.%20Divine.%3C/p%3E%3Cp%3EIt%20was%20the%20first%20thing%20I%20smelled%20when%20I%20walked%20into%20their%20kitchen,%20prompting%20me%20to%20pretty%20much%20immediately%20ask%20for%20the%20recipe.%20I%20was%20pumped%20to%20learn%20it%20couldn%E2%80%99t%20be%20easier%20to%20prepare,%20so%20I%20did%20at%20home%20the%20very%20next%20week.%20Of%20course%20I%20gave%20it%20an%20IGE%20spin%20and%20came%20up%20with%20Mini%20Salsa%20Turkey%20Meatloaves%20for%20your%20chowing%20pleasure.%20:%20)%3C/p%3E%3Cp%3E99%25%20fat-free%20ground%20turkey%20breast%20is%20mixed%20with%20salsa,%20cheddar%20cheese,%20seasoned%20breadcrumbs,%20an%20egg,%20garlic,%20and%20spices%20then%20shaped%20into%20mini%20loaves%20and%20baked.%20We%E2%80%99re%20talking%2030%20minutes%20from%20fridge%20to%20table,%20and%20everybody%20gets%20their%20own%20little%20loaf.%20Too%20sweet!%3C/p%3E%3Cp%3EYou%20would%20never%20guess%20these%20mini%20meatloaves%20were%20made%20with%20lean%20ground%20turkey.%20They%20are%20so%20juicy%20from%20the%20salsa,%20which%20not%20only%20keeps%20them%20from%20drying%20out%20in%20the%20oven,%20but%20also%20gives%20the%20dish%20a%20ton%20of%20flavor.%20You%20will%20totally%20dig%20these!%3C/p%3E%3Cp%3EStart%20the%20Mini%20Salsa%20Turkey%20Meatloaves%20with%201lb%2099%25%20fat-free%20ground%20turkey%20breast.%20My%20grocery%20store%20was%20having%20a%20sale%20on%20packages%20this%20weekend%20so%20I%20stocked%20up%20to%20have%20a%20bunch%20on%20hand%20in%20the%20freezer.%20I%20saved%20$2%20off%20the%20regular%20price!%3C/p%3E%3Cp%3ENext%20add%201/2%20cup%20Italian-seasoned%20bread%20crumbs%20(these%20were%20whole%20wheat%20bread%20crumbs)%20and%201/2%20cup%20shredded%20cheddar%20cheese.%20I%20loved%20how%20the%20cheddar%20cheese%20formed%20little%20cheddar%20pockets%20all%20throughout%20the%20meatloaves%20and%20also%20created%20a%20crispy,%20savory%20crust%20on%20the%20bottom.%20So%20yum.%3C/p%3E%3Cp%3ENext%20add%20the%20salsa%20(because%20people%20like%20to%20say%20sal-saaaaah%E2%80%A6%20name%20that%20tv%20show!)%201/2%20cup%20of%20your%20favorite%20salsa,%20to%20be%20exact.%3C/p%3E%3Cp%3EI%20used%20Sabra%E2%80%99s%20new%20Roasted%20Garlic%20Salsa,%20which%20the%20company%20sent%20me%20to%20review%20along%20with%20their%20other%20styles%20of%20fresh%20salsa.%20(See%20the%20end%20of%20this%20post%20for%20details%20on%20how%20you%20can%20try%20Sabra%E2%80%99s%20salsas%20for%20free!)%3C/p%3E%3Cp%3EAll%20the%20flavors%20of%20salsa%20were%20very%20fresh%20%E2%80%93%20more%20like%20homemade%20vs%20%E2%80%9Cjarred%E2%80%9D%20%E2%80%93%20but%20I%20thought%20this%20roasted%20garlic%20flavor%20would%20really%20liven%20up%20the%20lean%20ground%20turkey.%20The%20smell%20of%20savory%20garlic%20hit%20me%20the%20minute%20I%20opened%20the%20package.%3C/p%3E%3Cp%3EOn%20top%20of%20the%20salsa%20add%203%20cloves%20minced%20garlic%20(doublin%E2%80%99%20down%20on%20the%20garlic%20flavah%20in%20here!)%201%20whisked%20egg,%20salt,%20and%20pepper.%3C/p%3E%3Cp%3EMix%20with%20your%20hands%20until%20just%20combined%20then%20separate%20the%20turkey%20mixture%20into%204%20sections,%20shape%20them%20into%20mini%20loaves,%20and%20then%20place%20onto%20a%20nonstick%20sprayed%20baking%20sheet.%3C/p%3E%3Cp%3EBake%20the%20mini%20meatloaves%20for%2020-24%20minutes%20at%20425%20degrees%20then%20serve,%20slice,%20and%20enjoy!%3C/p%3E%3Cp%3EMini%20Salsa%20Turkey%20Meatloaves%3C/p%3E%3Cp%3EServes%204%3C/p%3E%3Cp%3ESlightly%20adapted%20from%20the%20Iowa%20T
