Ingredients

  • 4 quart Water
  • 1 lb Ham
  • 1 lb Bony chicken parts
  • 1/4 lb Sliced prosciutto or possibly bacon
  • 2 c. Diced, potatoes
  • 2 c. Sliced celery
  • 4 sm Zucchini, sliced in 1/2-inch pcs
  •     About 1 1/2 c. Sliced leeks
  • 1 lb Green beans, cut in 2-inch lengths
  • 1/2 c. Salad macaroni (ditalini)
  • 1 lb Peas, shelled
  • 4 c. White cabbage, shredded
  •     About 2 tsp. Salt
  •     Pesto sauce (see sauces category)

Directions

  1. Combine water, ham, chicken parts, and prosciutto, and bring to boiling. Cover and simmer 2 hrs. Strain and reserve stock; throw away meat and bones. Bring stock to boiling and add in potatoes; cover and simmer 10 min. Remove cover and add in celery, zucchini, leeks, green beans, and macaroni and cook 4 to 5 min more. Salt to taste. Ladle soup at once into bowls (the green vegetables lose their bright color if allowed to stand) and spoon in Pesto sauce to taste.
  2. Makes 6 to 7 qts.
