  • 1 (1 lb.) can stewed tomatoes
  • 1 teaspoon grated orange peel
  • 1 teaspoon salt
  • 1 teaspoon basil
  • 1/4 teaspoon pepper
  • 4 to 5 med. potatoes (about 1 1/2 lbs.), sliced 1/8 inch thick
  • 1 pound lean grnd beef, broken into pcs
  • 1 1/2 c. grated sharp Cheddar cheese

Directions

  1. In shallow 2 qt microwave proof dish, mix tomatoes, orange peel, salt, basil and pepper. Add in potatoes, mix and spread in even layer. Cover loosely with plastic wrap. Microwave on high power for 8 min. Stir, cover and microwave on high power for 8 min.
