  1. Combine all ingredients in a bowl. Work the mix till the seasonings are proportionately distributed. Cover tightly and chill for at least 3 hrs. When ready to use form into patties or possibly sausage rolls. Use as you do commercial chorizo.
  2. The reason for making chorizo is to control the fat content.
