  • 8 ounce Tomato sauce
  • 1 tsp Grnd cumin
  • 1/4 tsp Onion pwdr
  • 1/8 tsp Garlic pwdr
  • 1/4 tsp Cocoa
  • 1/8 tsp Salt
  • 1 Tbsp. Chili pwdr
  • 2 x Chicken breasts, boneless cooked, minced
  • 1 c. Rice
  • 1 c. Cheddar cheese shredded Lowfat sour cream Picante sauce Tomato minced (opt)

Directions

  1. Prepare sauce in small saucepan by mixing 2/3 can tomato sauce and spices.
  2. Add in minced, cooked chicken. Put sauce on low heat and stir occasionally.
  3. Prepare rice. When rice is done, and remaining 1/3 can tomato sauce to rice and stir. To serve, place rice on plates, topped with chicken-sauce and then shredded cheese. Serve with lowfat sour cream, picante sauce, and minced tomato if you like.
