Basil Lemon Bowties Recipe

  • 1 Tbsp. extra virgin olive oil
  • 1 med garlic clove chopped
  • 1 pkt medium-size bowties - (8 ounce)
  • 1 Tbsp. fresh lemon juice
  • 1 tsp finely-grated lemon zest
  • 1/2 bn basil - (abt 12 lge leaves)
  • 1/2 tsp salt
  • 1/4 tsp freshly-grnd black pepper
  • 1/2 c. freshly-grated Parmesan

Directions

  1. Bring large pot of salted water to a boil. Add in bowties and cook according to package instructions.
  2. Stack 5 to 6 basil leaves at a time, roll them up tight and slice across the roll, spacing cuts 1/8-inch apart or possibly less. Repeat with more leaves till quantity reaches firmly-packed 1/2 c..
  3. Heat oil in a large skillet over low heat for 1 minute. Add in garlic and saute/fry, stirring often, 1 minute. Remove from heat.
  4. Add in well-liquid removed bowties and toss well till coated with garlic-oil mix. Add in lemon juice and zest, basil, salt, and pepper, and toss till basil wilts.
  5. Divide pasta among 4 large heated plates, top each portion with 1 Tbsp. grated cheese and serve.
  6. This recipe yields 4 servings.
