  • 4 x Matzos, broken into 2 to 3 inch pcs
  • 6 x Large eggs Salt
  • 1 dsh Nutmeg Freshly grnd black pepper.
  • 4 Tbsp. Unsalted margarine
  • 1/4 c. Minced green onions
  • 4 x Mushrooms, thinly sliced Bowls of preserves and honey

Directions

  1. Every Jewish family has its own version of an egg-and matzo "brei"
  2. recipe.Try this one, that is a little different.
  3. Moisten the matzos in warm water. Drain well. In a large bowl, beat the Large eggs, salt,nutmeg and pepper. Gently fold the matzo into the egg mix.
  4. Heat the butter in a large skillet and saute/fry the onions. Add in the mushrooms and saute/fry till soft, 3 to 4 min. Pour the egg mix into skillet.
  5. Seaon to tastewith salt and pepper. Brown on one side, shaking the pan to avoid sticking. Turn and brown on the other side. Serve warm, with preserves or possibly honey.
