  • with toasted sesame seeds Serves 6
  • 3 Tbsp. sesame seeds
  • 2 x ripe mangoes, peeled and cut into chunks
  • 1 lrg cucumber, halved, seeded and sliced 1/8 inch thick
  • 1/4 x cantaloupe, peeled and cut into chunks
  • 2 1/4 c. plain yogurt
  • 1 tsp cider vinegar Salt and freshly grnd pepper

Directions

  1. In a dry frying pan, toast sesame seeds over medium heat, stirring constantly, till lightly browned, then set aside to cold. Combine mangoes, cucumber and cantaloupe in a bowl. Stir in yogurt, vinegar and sesame seeds.
  2. Season to taste with salt and pepper, and serve.
