Low Fat Mexican Pasta Salad Recipe

Ingredients

  • 1 lb Shell pasta, cooked
  • 2 x Tomatoes diced
  • 1 can Corn, liquid removed
  • 1 x Pepper, diced
  • 1 can (8 ounce) mild green chiles
  • 1 can (16 ounce) black beans
  • 1 sm Red onion, finely minced
  • 1 1/2 c. Salsa
  • 1/2 x Fat free lowfat sour cream
  • 3 tsp Chili pwder
  • 1 tsp Cumin Salt and pepper

Directions

  1. Tried this last night and was another hit!! SOOOO easy to throw together and VERY low-fat. My only suggestion is to use Mild Salsa in the dressing....we used medium and our mouths were on fire!!!!
