Low Fat `Creamed' Greens And Onions Recipe

Ingredients

  • 2 lb Small white onions
  • 1 1/2 lb Kale or possibly other greens, coarsely minced
  • 1 tsp Margarine or possibly butter
  • 2 x To 3 tb flour
  • 1 c. Skim lowfat milk
  • 1 tsp Rosemary, crumbled
  • 1 tsp Worchestershire ds Pepper

Directions

  1. Peel onions and place in a large saucepan or possibly skillet sprayed with nonstick cooking spray. Cook 3 min, stirring, then cover and reduce heat to low. Cook 5-10 min. Add in greens, cover and simer in their own juices till simmer, 5-7 min. Drain. Heat margarine in small saucepan, gradually add in flour and cook 1 minute. Stirring constantly, add in lowfat milk gradually and continue stirring till thickened. Stir in seasonings. Pour over greens and onions; gently blend.
