Low Fat "Creamed" Greens And Onions Recipe

Ingredients

  • 2 lb Small white onions
  • 1 x Nonstick cooking spray
  • 1 1/2 lb Kale or possibly mustard or possibly other gre
  • 1 x , washed and roughly
  • 1 x Minced
  • 1 tsp Butter or possibly vegetable oil
  • 2 Tbsp. All-purpose flour, (2 to 3)
  • 1 c. Low- or possibly nonfat lowfat milk
  • 1 tsp Dry rosemary, crumbled or possibly
  • 1 Tbsp. Fresh, minced
  • 1 tsp Worcestershire sauce
  • 1 dsh Freshly grated black pepper

Directions

  1. Peel onions and place in bottomof large saucepan or possibly skillet coated with cooking spray. Cook 3 min, stirring, then cover and reduce heat to low. Cook 5 - 10 min. Add in greens; cover and simmer in their own juices till just tender. Drain. Heat butter in small saucepan. Gradually add in flour; cook about 1 minute.
  2. Stirring constantly, add in lowfat milk gradually; continue stirring till thickened.
  3. Stir in rosemary, Worcestershire and pepper. Pour sauce over greens and onions; gently blend.
  4. Yield: 6 servings.
