%20mother-in-law%20that%20she%20made%20a%20statement%20about%20chicken%20I%E2%80%99ve%20never%20forgotten.%3C/p%3E%3Cp%3EThe%20Omnivore%20was%20mulling%20over%20a%20restaurant%20menu%20and%20his%20mom%20was%20going%20to%20treat%20us%20to%20dinner.%20%20He%20finally%20decided%20on%20chicken%20and%20announced%20that%20fact%20when%20mom-in-law%20said,%20%E2%80%9CUGH!%20DO%20NOT%20ORDER%20CHICKEN!%20%20Your%20future-wife%20can%20make%20beautiful%20chicken%20at%20home.%E2%80%9D%3C/p%3E%3Cp%3ECue%20bashful%20looks%20and%20giving%20the%20side-eye%20to%20one%20another:%20we%20both%20know%20that%20beautiful%20chicken%20was%20not%20coming%20out%20my%20kitchen%20on%20a%20regular%20basis%20and%20the%20prospects%20of%20the%20aforementioned%20chicken%20were%20not%20looking%20good.%20%20I%20was%20a%20vegetarian%20at%20the%20time,%20newly%20interested%20in%20cooking,%20and%20whatever%20this%20statement%20of%20beautiful%20chicken%20is%20%E2%80%93%20well%20%E2%80%93%20it%20was%20far%20from%20what%20my%20husband%20was%20experiencing%20at%20home.%3C/p%3E%3Cp%3EIt%20was%20tough%20cooking%20meat%20when%20I%20never%20ate%20it%20and%20for%20some%20reason%20I%20was%20drawn%20to%20boneless%20skinless%20chicken%20breasts%20when%20cooking%20meals%20for%20my%20husband.%20%20It%20was%20probably%20due%20to%20their%20versatility%20and%20easily%20accommodating%20nature%20when%20it%20came%20to%20meatifying%20my%20vegetarian%20dinners.%3C/p%3E%3Cp%3EWhen%20I%20finally%20got%20around%20to%20eating%20meat,%20boneless,%20skinless%20chicken%20was%20what%20I%20tasted%20first.%20%20And%20let%20me%20tell%20you:%20we%E2%80%99re%20lucky%20I%20didn%E2%80%99t%20vow%20off%20all%20meat%20right%20then%20and%20there.%20%20What%20a%20chewy%20lump%20of%20flavorless%20cud.%20%20Clearly%20my%20poor%20husband%20had%20been%20very%20polite%20for%20many%20years%20and%20rightly%20deserved%20ordering%20chicken%20in%20a%20restaurant.%3C/p%3E%3Cp%3EI%20feel%20safe%20saying%20that%20I%20can%20cook%20%20a%20more%20appealing%20version%20of%20boneless,%20skinless%20chicken%20these%20days,%20although%20it%20is%20not%20a%20meat%20I%20gravitate%20towards.%20%20We%20really%20ever%20have%20a%20hunk%20of%20meat%20as%20an%20entree%20for%20dinner%20%E2%80%93%20we%20may%20have%20chicken%20IN%20something%20but%20never%20something%20WITH%20CHICKEN.%20%20Does%20that%20make%20sense?%3C/p%3E%3Cp%3EIn%20any%20case,%20this%20meal%20will%20be%20a%20repeat%20offender%20in%20our%20house.%20%20It%20fits%20the%20bill%20of%20beautiful%20chicken%20and%20I%20might%20even%20have%20the%20courage%20to%20serve%20it%20to%20my%20mother-in-law.%3C/p%3E%3Cp%3ELemon%20Chicken%20with%20Asparagus%20(inspired%20by%20Natalie%E2%80%99s%20Killer%20Cuisine)%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3Etoothpicks%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3EClean%20and%20trim%20chicken%20breasts.%20Place%20a%20chicken%20on%20a%20cutting%20board%20and%20cover%20with%20a%20large%20piece%20of%20plastic%20food%20wrap.%20Using%20a%20mallet%20or%20a%20heavy%20skillet,%20pound%20chicken%20until%201/2%E2%80%B3%20all%20over.%3C/p%3E%3Cp%3EPlace%20chicken%20breast%20side%20down%20(fleshy%20side%20up)%20and%20sprinkle%20with%20salt,%20pepper%20and%20lemon%20zest.%3C/p%3E%3Cp%3EPlace%20half%20the%20asparagus%20spears%20on%20top%20of%20the%20chicken%20breast%20and%20fold%20meat%20tightly%20over%20the%20spears,%20securing%20with%20two%20or%20three%20toothpicks.%3C/p%3E%3Cp%3ERepeat%20with%20remaining%20breast.%3C/p%3E%3Cp%3EPreheat%20skillet%20to%20medium-high%20heat%20and%20coat%20with%20olive%20oil,%201-2%20tsp.%20Place%20rolled%20breasts%20good%20side%20down%20(seam%20side%20up)%20and%20cook%205%20minutes%20or%20until%20lightly%20browned.%3C/p%3E%3Cp%3ETurn%20chicken%20over%20carefully,%20and%20pour%20minced%20garlic%20and%20lemon%20juice%20all%20over.%20Pour%20chicken%20stock%20into%20pan%20and%20cook,%20covered,%20an%20additional%203-5%20minutes.%3C/p%3E%3Cp%3EPlace%20chicken%20in%20a%20350%20degree%20oven%20and%20cook%205-10%20minutes%20or%20until%20full%20cooked.%3C/p%3E){kind=link}
