  • In this recipe, matzo meal binds a delicious stuffing which features grnd lamb, pine nuts, fresh mint and turmeric.
  • 12 x (8-oz) tomatoes
  • 1 1/2 lb grnd lamb
  • 1 lrg onion, minced
  • 3/4 c. unsalted matzo meal
  • 1/2 c. minced fresh parsley
  • 1/4 c. pine nuts
  • 1 lrg egg
  • 2 Tbsp. minced fresh mint
  • 1 1/2 tsp salt
  • 1 tsp grnd black pepper
  • 1 tsp grnd turmeric

Directions

  1. Stand tomatoes on stem ends. Cut off top 1/4 of tomatoes (reserve tops for another use). Using melon baller, scoop out seeds and pulp from tomatoes.
  2. Sprinkle insides of tomatoes lightly with salt. Place tomatoes, cut side down, on paper towels and drain 20 min.
  3. Preheat oven to 350 F. Lightly oil 13 x 9 x 2 inch glass baking dish. Mix lamb and all other ingredients in large bowl to blend. Fill tomatoes with lamb stuffing, mounding slightly at top. Arrange tomatoes in prepared dish.
  4. Bake tomatoes till stuffing is cooked through and meat thermometer inserted into center of stuffing registers 160 F, about 1 hour. Let stand at least 10 min. Serve tomatoes hot or possibly at room temperature.
  5. Serves 12.
