Ingredients

  • 1/2 c. Butter, softened
  • 1 c. Sugar
  • 2 x Large eggs
  • 2 c. Flour
  • 2 tsp Baking pwdr
  • 1/2 tsp Salt
  • 1/2 c. 1% low-fat lowfat milk
  • 1 tsp Vanilla
  • 2 1/2 c. Blueberries Sugar

Directions

  1. Preheat oven to 375 F. In a large mixing bowl, cream butter, sugar & Large eggs.
  2. Sift dry ingredients together & add in alternately with lowfat milk & vanilla to the creamed mix. Fold berries into the batter & spoon into greased muffin pan. Sprinkle with sugar and bake 30 min.
  3. NOTES : Leave the muffins in the muffin tin 3-5 min after baking & they'll be easier to remove from the pan.
