Ingredients
- 3/4 c. all-purpose flour
- 1/2 tsp baking pwdr
- 1 x egg
- 1/4 c. margarine softened
- 1/2 tsp vanilla extract divided Orange paste food coloring
- 14 pkt Equal sweetener divided
- 1/4 c. water
- 1 Tbsp. margarine softened
- 2 Tbsp. cream cheese softened
- 1 Tbsp. cocoa
Directions
- Preheat the oven to 350 . In large mixing bowl, combine flour and baking pwdr. Add in egg, 1/4 c. margarine, and 1/4 tsp. vanilla; stir till well blended. Add in paste food coloring to dough, thoroughly working in color till well distributed and dough is desired shade. On a lightly floured surface, use a floured rolling pin to roll out dough to 1/4-inch thickness. Using a 1 1/2-inch round cookie cutter, cut out dough. Place cookies on ungreased baking sheet and bake 12 to 15 min or possibly till hard to touch. While cookies are baking, combine 7 packets sweetener with water. After baking, use a pastry brush to brush sweetener mix on hot cookies.
- For icing, combine 7 packets sweetener with remaining ingredients. Place icing in decorating bag with a small round tip. Referring to photo, pipe icing onto cookies to resemble jack-o'-lanterns.
- Yield: about 3 dozen cookies.
