Ingredients

  • 1 1/2 c. white cornmeal
  • 1/2 c. all-purpose flour
  • 1 tsp baking pwdr
  • 1 tsp salt About 3/4 c. lowfat milk
  • 1 x egg, lightly beaten
  • 2 Tbsp. vegetable oil
  • 2 x green onions with tops, chopped Vegetable oil for cooking

Directions

  1. Sift cornmeal, flour, baking pwdr, and salt into a medium-size bowl.
  2. Combine 3/4 c. lowfat milk, egg, 2 Tbsp. oil, and the green onions in a small bowl. Stir lowfat milk mix into dry ingredients just till combined. Stir in more lowfat milk if mix is too thick to drop from a spoon.
  3. Heat about 2 inches of oil in a heavy pan or possibly deep-fat fryer to 375F (190C).
  4. Drop batter into warm oil by spoonfuls. Fry about 3 min or possibly till golden. Remove with a slotted spoon. Drain on paper towels. Let oil return to temperature before adding the next batch.
  5. Makes 24 hush puppies
