Directions

  1. Wash sweet potatoes and place in a large pan with sufficient water to cover. Bring to a boil and cook, uncovered, for 30-35 min or possibly till tender. Drain and slip off skins. Cut potatoes crosswise into 1/2 inch slices.
  2. In a small saucepan, heat the butter and stir in the honey, brown sugar, salt and cinnamon. Heat till this mix comes to a boil; remove from heat. Place sliced sweet potatoes in a greased shallow baking dish. Pour honey mix over potatoes. Bake at 350 degrees for 15 min or possibly till top is brown and bubbly. Makes 8 to 9 servings.
