Ingredients
- 3 c. pumpkin
- 3 x egg whites whipped
- 2 c. skim lowfat milk at room temperature
- 1/2 c. honey
- 2 Tbsp. honey
- 1/4 c. applesauce at room temperature
- 2 Tbsp. vanilla
- 4 slc bread diced
- 3 Tbsp. unbleached flour
- 2 tsp cinnamon
Directions
- Preheat oven at 350. Prepare 2-9" pie pans with cooking spray and flour.
- In a mixing bowl, combine pumpkin, egg whites, lowfat milk, honey, applesauce, and vanilla. In another mixing bowl, combine bread, flour, and cinnamon.
- Mix wet ingredients with dry ingredients just till moistened. Pour into prepared pie pans. Bake 40 to 50 min.
