Directions

  1. Combine chicken broth, onions, parsley, oregano, chervil and salt and pepper to taste in large saucepan and bring to boil. Add in zucchini and boil till tender, about 5 min. Transfer mix to blender.
  2. Cook peas in boiling salted water till tender. Drain. Add in to blender and puree till smooth. Add in sugar, horseradish and lemon juice and blend thoroughly. Fold in half and half. Cover and chill at least 5 hrs.
  3. Adjust seasoning with salt and pepper. Ladle soup into bowls. Garnish with lemon and zucchini rounds.
