  • 1 pkt sugarless cook & serve vanilla pudding mix 4-serving size
  • 1 pkt sugar-free cherry gelatin 4-serving size
  • 1/4 c. water
  • 1 can crushed pineapple in juice (8 ounce.) undrained
  • 2 c. tart red cherries in juice or possibly water undrained one 16 ounce. can
  • 1/2 tsp coconut extract (up to 1)
  • 3/4 c. light whipped topping
  • 3 Tbsp. minced pecans
  • 1/2 c. mini marshmallows
  • 2 Tbsp. coconut

Directions

  1. In a medium saucepan, combine dry pudding mix, dry gelatin, water, and undrained pineapple. Stir in undrained cherries. Cook over medium heat, stirring often, till mix thickens and starts to boil, being careful not to crush the cherries. Remove from the heat. Stir in extract. Place pan on a wire rack and let set 20 min. Spoon cherry mix into a large bowl. Add in whipped topping, pecans, marshmallows, and coconut. Mix gently to combine. Spread into an 8x8 dish (makes it easy to divide into equal servings) or possibly simply put into the bowl of your choice for spooning out the servings as desired. Cover and chill at least 1 hour. Divide into 6 servings.
  2. I substitute 2 c. of my own home-frzn cherries and 1/2 c. additional water for the canned cherries.
