Ingredients

  • 1 pound turkey sausage or possibly bulk pork sausage
  • 1 med. onion, minced (1/2 c.)
  • 1/2 c. coarsely minced green pepper
  • 1 clove garlic chopped
  • 1 (16 ounce.) can Mexican style stewed tomatoes
  • 2 c. water
  • 1 (10 1/2 ounce.) can condensed beef broth
  • 1/2 of a 6 ounce. can tomato paste (1/3 c.)
  • 1/2 teaspoon chili pwdr
  • 1/3 c. quick cooking rice
  • 1 med. zucchini, halved lengthwise and sliced 1/2 inch thick
  • 1 can white beans

Directions

  1. In large saucepan cook sausage, onion, green pepper and garlic till onion is tender and sausage is brown. Drain off fat. Cut up any large vegetables in stewed tomatoes add in to sausage mix with water, broth, paste, chili pwdr, rice, zucchini and beans. Cook for 1 hour on low heat.
