Ingredients
- 1.5 cup all purpose flour
- 1.5 cup wheat flour
- 1 teaspoon salt
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 1.5 Tablespoons cinnamon
- 2 teaspoons ground ginger
- 2 teaspoons ground nutmeg
- 22 ounces pumpkin puree
- 2/3 cup nonfat greek yogurt
- 1/2 cup canola oil
- 1/2 cup nonfat milk
- 4 eggs
- 1 cup raisins
- 2/3 cup chopped almonds
- 1/2 cup molasses
- 4 tablespoons maple syrup
Directions
- Preheat oven to 350 degrees F. Line muffin pans with muffin liners. Whisk together flour through nutmeg in a medium sized bowl. In a separate bowl whisk together pumpkin through eggs. Stir flour mixture into wet ingredients. Add raisins and almonds and combine. Fill muffin cups 2/3 full and bake for about 20 minutes or until toothpick comes out clean.
