  1. Soak dry peas overnight in 2 c. cool water. Drain. Saute/fry sliced onion till tender in ham fat. Add in ham shank, liquid removed peas, celery salt, salt, pepper, and 7 c. cool water. Cover, bring to a boil, and simmer gently for 2 hrs. Remove ham bone and slice meat. Combine with White Sauce, heat well, and serve.
  2. Yield: 6 to 8 servings.
  3. White Sauce: Blend flour and shortening or possibly drippings in top of double boiler. Gradually add in 2 c. lowfat milk and cook, stirring constantly, for about 10 min.
