Delicious soup using leftover Ham. Great light supper or lunch.
Ingredients
- one cup cubed Ham
- one 15.5 ounce can Navy Beans (Or any white beans-rinsed)
- 1-1/2 cups vegetable stock (low sodium)
- 1/2 cup cold water
- one sage leaf
- one bay leaf
- one carrot, diced
- 1/4 onion diced
- one clove of garlic minced
- fresh parsley chipped finely
- black pepper, to taste
Directions
- In a lidded soup pot add stock, water, on medium heat, add diced carrot, onion, sage & bay leaf, diced onion and cook 8 minutes, add ham cubes, fresh parsley, beans, stir well, cover, lower heat to simmer and cook 12 minutes.
