Grilled Snapper With Orange Almond Sauce Recipe

  • 6 x snapper or possibly grouper fillets - (8 ounce ea)
  • 2 Tbsp. extra virgin olive oil
  • 1 tsp coarse-grain sea salt
  • 1 tsp freshly-grnd black pepper
  • 4 x fresh thyme sprigs (orange thyme may be substituted)
  • 1/2 c. butter
  • 1/2 c. sliced almonds
  • 1/2 Tbsp. grated orange rind - (to 1) Orange wedges Thyme sprigs

Directions

  1. Rub fish fillets with oil. Sprinkle proportionately with 1 tsp. salt and 1 tsp. pepper.
  2. Arrange thyme sprigs on warm charcoal or possibly warm lava rocks on grill. Coat food rack with vegetable cooking spray; place on grill over high heat (400 to 500 degrees). Place fish on rack, and grill 5 to 6 min on each side or possibly till fish flakes with a fork.
  3. Heat butter in a saucepan over medium-high heat; add in almonds, and saute/fry 5 min or possibly till butter is brown. Remove from heat. Stir in orange rind. Pour sauce over fish. Garnish, if you like.
  4. This recipe yields 6 servings.
