Grilled Corn With Cumin Scallion Butter Recipe

  • 1/2 Tbsp. cumin, seeds
  • 1/4 tsp coarse salt
  • 2 x scallion
  • 3/4 stk unsalted butter
  • 1/2 tsp fresh lemon, juice
  • 8 x ears corn, in husks

Directions

  1. In a dry small heavy skillet toast seeds over moderate heat, shaking till fragrant. Grind seeds and salt. Finely chop scallion greens to measure 1/4 c.. In a saucepan heat butter with cumin salt, stirring and stir in scallion greens and lemon juice. Cold butter.
  2. Peel husks from corn leaving them attached at the base. Brush with some butter and reassemble husks over ears. Grill corn for about 20 min.
  3. Serve corn with butter.
