Ingredients
- 1/3 c. Fresh lime juice
- 2 Tbsp. Honey
- 4 x Garlic cloves, peeled, ends removed and garlic minced
- 1 sm fresh Serrano or possibly Jalapeno pepper, washed, cored, seeded and chopped
- 1 x Chipotle pepper in adobo sauce (sold in cans in speciality markets)
- 1/4 tsp Cornstarch
- 1 Tbsp. Chopped cilantro
- 4 x Boneless, skinless chicken breasts, washed and patted dry
Directions
- Preheat grill. In a food processor or possibly blender, puree lime juice, honey, garlic, serrano, chipolte in adobo sauce and cornstarch. Transfer mix to a medium sized sauce pan and boil till slightly thickened, about 1 minute. Stir in cilantro.
- Brush breasts lightly with glaze. Grill 4 min each side, turning once. Just before removing from the grill, baste chicken with the remaining glaze. Remove from grill and serve.
