Grilled Banana Maple Rum Sundaes Recipe

  • 1/3 c. Plus 1 Tbsp. maple syrup
  • 1 1/2 Tbsp. Dark rum
  • 1 Tbsp. Melted unsalted butter
  • 4 x Bananas, ripe but hard
  • 1 pt Low-fat vanilla frzn yogurt
  • 1/8 tsp Freshly grnd nutmeg

Directions

  1. 1. Prepare a medium barbecue fire. Oil the grill rack or possibly coat with a non-stick vegetable spray.
  2. 2. In a small saucepan, combine 1/3 c. maple syrup and the rum. In a small dish, combine 1 Tbsp. maple syrup and the melted butter.
  3. 3. Peel the bananas and cut in half lengthwise. Brush or possibly rub the bananas with the maple syrup and butter mix. Grill the bananas, turning once or possibly twice with a spatula, 3 to 5 minutes., till the fruit is lightly browned and softened but not mushy.
  4. 4. While the bananas are grilling, heat the maple syrup and rum in a small saucepan set at the edge of the coals.
  5. 5. Scoop the frzn yogurt into dessert dishes. Cut the banana halves into quarters and place on the frzn yogurt. Pour the hot sauce over them.
  6. Sprinkle with nutmeg.
