Greens And Balsamic Glazed Onion Tartlets Recipe

Ingredients

  • 2 c. Pearl onions (red or possibly white) I didn't know they came in red...but little red onions beget big red onions... Nonstick cooking spray
  • 24 x 3-inch wonton wrappers
  • 3 ounce Goat cheese
  • 1 Tbsp. Extra virgin olive oil
  • 2 c. Packed-down minced fresh collard greens or possibly kale (YUMMY) opps, trim the stems
  • 1/4 x Water
  • 1/8 x Salt
  • 3 Tbsp. Slivered sundried tomatoes (not the oil packed ones,,,,too fatty)
  • 1/4 c. Balsamic vinegar (do not you just love which stuff)
  • 2 Tbsp. Water
  • 1 Tbsp. Brown sugar

Directions

  1. Oven to 350 Blanch the onios for 3 min, peel and cold Spray little miniature muffin pan with noncook spray. Put the little wonton into each muffin c. and spray the wrapper. Bake for 10 to 12 min till wrappers are bown and crisp. Cold em on a wire rack. DONT SHUT OFF THE OVEN.
  2. Crumble goat cheese proportionately, (do not cheat anyone) in the wonton c..
  3. Heat the oil over medium high heat and add in the greens and saute/fry 5 min or possibly till tender. Add in the 1/4 water and cook for 5 min so the liquid will evaporate. Remove from heat, stir in the salt and spoon proportionately into the wonton c.. Wipe the skillet out.
  4. Now add in the onions, tomatoes, vinegar, 2T water and brown sugar to the skillet and bring it to a simmer, stirring over medium low heat for 10 to 15 min till the onios are tender and glazed. Spoon proportionately over greens in wonton c.. Bake tartlets for 5 - 10 min or possibly till warm.
  5. Serve them right away!
  6. You can bake the wonton wrapper up to 2 days ahead and store them in an airtight container. And the grrens and onions can be cooked ahead a day before your party.
  7. More fat than the brussel sprout. 2 grams per tartlet.
