Ingredients
- 4 green chiles (about 3/4 lbs.)
- 1/4 c. light whole wheat flour (or all-purpose flour)
- 1/2 t. fine sea salt
- 1/2 t. baking powder
- 6 farm fresh eggs
- 2 T. butter, melted and cooled
- 1 c. low-fat cottage cheese
- 1 c. grated cheese (I used a mix of Monterey Jack and Cheddar.)
