Directions

  1. Heat 1/3 c. oil in heavy medium saucepan over medium heat. Add in onion and sauce till golden, about 12 min. Add in tomatoes, 2 Tbsp. parsley, garlic and cayenne. Season with salt and pepper. Bring to boil. Reduce heat, cover and simmer till sauce thickens, stirring occasionally, about 10 min. (Can be prepared 1 day ahead. Cover and chill.) Rewarm before continuing.
  2. Preheat oven to 400 degrees. Heat remaining 3 Tbsp. oil in heavy skillet over medium-high heat. Add in shrimp and saute/fry 1 minute. Remove skillet from heat. Add in ouzo. Ignite with match. Return to heat, cook till flame subsides. Add in tomato sauce. Transfer shrimp and sauce to 9" diameter pie dish. Sprinkle cheese over. Bake till shrimp are cooked through, about 10 min. Sprinkle with remaining parsley. Serve immediately. Pass French bread. Serve with pasta or possibly basmati rice. Very flavorful.
