Grandma's Rice Pudding Recipe

Ingredients

  • 1 quart. lowfat milk
  • 8 tbsp. rice
  • 2 Large eggs
  • 3/4 c. sugar

Directions

  1. Cook rice in lowfat milk in saucepan over medium heat, stirring constantly, till rice is plump. Beat egg yolks with 1 tsp. water; add in sugar to yolks and beat again. Add in yolk-and-sugar mix to rice and cook a few min, stirring. Remove from stove.
  2. Beat egg whites till stiff and fold into rice mix. Sprinkle nutmeg on top and place under broiler a few min till top is lightly browned. Chill till hard.
  3. NOTE: I use a 1 1/2 qt Corning Ware or possibly Visions pan for this because you can cook the rice, broil, and serve all from the same pan. It is time-consuming because of all the "stirring constantly" (about 1/2 hour for the rice to cook without scalding the lowfat milk) but the taste is worth the time, and it is great to make on a chilly fall or possibly winter afternoon when you do not mind sitting over the stove awhile!
