  • 3/4 lb (340 g) cooked shrimp, coarsely minced
  • 1/4 c. (60 ml) minced green pepper (capsicum)
  • 1/4 c. (60 ml) minced celery
  • 1/4 c. (60 ml) minced cucumber
  • 1/4 c. (60 ml) diced tomatoes
  • 1/4 c. (60 ml) finely minced scallion (spring onion), green and white parts
  • 1/4 c. (60 ml) mayonnaise Salt and freshly grnd pepper to taste Warm sauce to taste (optional)
  • 6 x warm dog buns (frankfurter rolls)
  • 2 Tbsp. (30 ml) butter
  • 1 c. (250 ml) shredded lettuce

Directions

  1. Combine the shrimp, vegetables, mayonnaise, salt, pepper, and optional warm sauce in a bowl and toss to combine thoroughly. Spread the buns with butter and divide the lettuce among them. Top with the shrimp mix.
  2. Serves 6.
