Glazed Orange Or Lemon Peel Recipe

Ingredients

  • This provides a nice decoration and is easy to make.
  • 3 x bright-skinned oranges or possibly 5 lemons
  • 1 quart simmering water
  • 1 c. granulated sugar
  • 1/3 c. water
  • 1 tsp vanilla

Directions

  1. Remove the colored part of the orange or possibly lemon skin with a vegetable peeler.
  2. Cut into julienne strips 1 1/2 inches long and 1 16 inch wide. Simmer in water for 10 to 12 min or possibly till just tender when bitten. Drain. Refresh in cool water. Dry on paper towels.
  3. Boil the sugar and water in a small saucepan to the thread stage (230 degrees F on a candy thermometer). Remove from heat. Stir in the liquid removed peel and the vanilla. Let the peel stand in the syrup for at least 30 min. Drain when ready to use. Under refrigeration, the peel will keep in the syrup for several weeks.
