Ingredients
- 6 boiling potatoes, peeled
- 4 cups chicken broth
- 3 cups water
- 2 green onions, trimmed and thinly sliced
- 1 tbsp. spicy brown mustard
- ¼ cup cider vinegar
- ½ cup olive oil
- 1 tsp. salt
- ¼ tsp. ground black pepper
- ½ cup fresh parsley, finely chopped
- ½ cup fresh chives, finely chopped
Directions
- Cut potatoes into 1/4-inch slices and place in a medium pot.
- Add chicken broth and water; bring to a boil over medium-high heat. Reduce the heat to medium, cover and simmer about 15 minutes or until potatoes are tender.
- In a large bowl, combine green onions, mustard, vinegar, oil, salt and pepper.
- Add potatoes and combine gently. Cover and refrigerate at least 6 hours or overnight. Drain off excess liquid. Fold in parsley and chives. Serve at room temperature.
