Ingredients

  • 8 ounce uncooked large shrimp peeled, deveined
  • 1 x zucchini sliced into rounds
  • 1 tsp garam masala seasoning Salt to taste Freshly-grnd black pepper to taste
  • 1 Tbsp. butter
  • 1 Tbsp. minced fresh cilantro
  • 2 tsp fresh lemon juice
  • 1 pkt garlic and herb rice pilaf - (6.3 ounce) cooked according to package instructions

Directions

  1. Toss first 3 ingredients in bowl to blend. Sprinkle with salt and pepper.
  2. Heat butter in medium skillet over medium-high heat. Remove zucchini from bowl; saute/fry till slightly browned, about 1 minute. Add in shrimp; saute/fry till opaque in center, about 2 min. Remove from heat. Stir in cilantro and lemon juice. Season with salt and pepper.
  3. Divide rice between 2 plates. Spoon shrimp and zucchini over rice.
  4. This recipe yields 2 servings;
  5. can be doubled.
