Ingredients
- 1 1/2 c. honeydew melon, cubed
- 1 1/2 c. cantaloupe, cubed
- 1 c. fresh peaches, sliced
- 1 c. seedless grapes
- 1 c. pitted dates, minced
- 3/4 c. part skim Mozzarella cheese, grated
- 1/2 c. almonds, minced
- 1/3 c. honey
- 1/3 c. frzn limeade concentrate, thawed
- 1 T corn oil or possibly safflower oil
- 2 med. bananas, sliced
- Romaine leaves
- Strawberries
Directions
- 1. In a large bowl put together melons, peaches, grapes, dates, cheese and almonds; toss lightly.2. In a mixer bowl put together honey, limeade concentrate and oil. Beat till whipped.
- 3. Add in with bananas to fruit mix. Toss gently.
- 4. In a salad bowl, arrange lining of romaine leaves. Spoon salad into prepared bowl. Garnish with strawberries. Makes 12 servings at 180 calories per serving.
