S.L.I.M Stands for Slightly Lowered Income Meals (TM). It is for those of us who have been hit hard with these troubling economic ties, but still love to eat. I will be building a website when I get around to it. In the meantime, The whole philosophy is that you do NOT have to spend a lot of money or time to enjoy a good meal. This is surprisingly good and easy to make...
Ingredients
- 2 cups of small pasta shells
- 1 small can of plain tomato sauce
- 1/2 bag of frozen peas
- 1 medium onion, diced
- 1 tbs of dried Basil
- 1 tbs of Olive Oil
- grated Ramono Cheese
Directions
- Boil the pasta as directed on the box.
- While the pasta is cooking, heat the oil in a small pot over medium heat and sweat the onions in the hot oil. Sweating means cook them until they are almost translucent. When you can smell them, they are done.
- Add the tomato sauce with peas and season with the basil (it should go without saying, but salt and pepper is an ingredient in everything)
- Let it simmer about 20 minutes
- Add the pasta and mix well
- Top with grated Ramono
