Directions

  1. 1) Sift flour, baking pwdr, and 1/2 ts salt together in a bowl. Beat in egg and beer.
  2. 2) Heat oil to 375 degrees in deep skillet or possibly deep fryer. Dip shrimp in batter, coating well. Fry shrimp, a few at a time, till golden.
  3. Drain on paper towels and keep hot.
  4. 3)In saucepan, combine cornstarch, sugar, 1/2 ts salt, and vinegar. Add in pineapple juice, cook over low heat, stirring constantly, till sauce thickens.
  5. 4) Arrange shrimp on serving platter. Place pineapple chunks around shrimp.
  6. Pour sauce on top; serve at once.
