Fried Pizza ( Pizza Fritta ) Recipe

Ingredients

  • 500 gm 00 or possibly plain white flour
  • 20 gm fresh yeast or possibly dry equivalent
  • 1 pch salt extra virgin olive oil for frying basic tomato sauce (qv)
  • 50 gm freshly grated Parmesan
  • 12 x basil leaves to decorate

Directions

  1. Put the flour in a large bowl.
  2. Dilute the yeast in water and leave for a few min.
  3. Add in this the salt and a little more water to the flour to obtain a fairly soft dough.
  4. Cover with a kitchen cloth and leave to prove for I hour by that time the dough will have doubled in size.
  5. Gently heat the tomato sauce.
  6. Meanwhile take a piece of dough about the size of an egg and roll it out on a noured work surface.
  7. Heat the oil in a pan and when it is warm add in the pizza and fry on each side till golden brown.
  8. Place on a plate and whilst still warm pour on a little of the tomato sauce and spread proportionately. Add in the Parmesan and some basil leaves.
  9. These are very moreish!
  10. If you try this for a pary make sure your guests can come into the kitchcn to keep you company otherwise youll be in there alone all night.
  11. Makes 6 x 20cm pizzas
